 Jalapeno Lime Chicken Tacos

Happy Cinco de Mayo to you all!

My family doesn’t need any type of an excuse to make tacos. We make tacos of some sort at least once a week. In my opinion they are the perfect go to food. They are easy to make, in most cases they are quick to make and lets face it just about everyone on the planet LOVES them! This recipe definitely falls into all of the above categories, it is easy, quick and delicious. Last summer I tried a jalapeno, tequila and lime marinade that required a lot of ingredients and really the only flavor that stood out to my husband and I was the tequila. That was no bueno to us. Since I almost always have jalapenos and limes on hand, one afternoon I came up with this super quick and easy marinade. How can you go wrong when there are only 5 ingredients and one of those is the chicken? These tacos have been a huge hit every time I have made them. They have a wonderful lime flavor and a hint of spice from the jalapeno. You could always add more jalapeno if you like more of that flavor. That is the beauty about this recipe, it can be so easily adapted for your likes.

The chicken is so moist and flavorful and could also be used on a salad or just eaten hot off the grill with a side of rice. I guarantee that this recipe will not disappoint.

Jalapeno Lime Chicken Tacos

2 boneless skinless chicken breasts
Juice of 3 limes
1 jalapeno, diced
1 tablespoon soy sauce
¼ teaspoon black pepper

Combine all ingredients in a Ziploc bag and let marinate in the refrigerator for 4-6 hours or overnight. Remove chicken from the bag and discard the bag and the marinade. Grill on your grill of choice until cooked thoroughly. Let the cooked chicken rest for 5-10 minutes on a cutting board to ensure the juices do not escape during chopping. Then chop or shred the chicken to your liking. Serve on warm tortillas and top with your favorite taco toppings.
